Wild caper bushes have found their ideal habitat in the volcanic soil of the sunny island of Pantelleria.
Our capers are IGP – Protected Geographical Indication – certified by the EU to attest their quality and origin.
Their buds are hand-picked at dawn or sunset, just before they blossom.
They are selected according to their size and preserved in sea salt to enhance their sour bitter flavour. Smaller buds are more delicate whereas bigger ones have a more intense taste.
Capers in sea salt are a perfect match with salad, sauce, warm or cold pasta and meat dishes, like vitel tonné.
Remember to rinse in tap water and drain before eating or cooking.
